ONE POT CREAMY CHILI CRISP PASTA

INGREDIENTS
FOR THE BASE
2 tbsp olive oil or neutral oil
1 medium onion, finely diced
4–5 cloves garlic, minced
2 tbsp tomato paste
1–2 tbsp Yo Amma Indian Chili Crisp (oil + crunchy bits)
½ tsp chili flakes (optional)
Salt to taste
FOR THE PASTA
12 oz pasta shape of choice (penne, rigatoni, fusilli, etc.)
1 cup heavy whipping cream
2½ cups water (plus more as needed)

HOW TO MAKE IT
Build the Flavor Base
In a wide, deep skillet or pot over medium heat, warm the oil. Add diced onion and cook for 5–6 minutes until softened and lightly golden.
Stir in garlic and chili flakes (if using) and cook for 30 seconds until fragrant.
Add tomato paste and cook for 2–3 minutes, stirring continuously, until it darkens slightly and begins to caramelize against the pan.
Once the tomato paste is cooked and concentrated, stir in Yo Amma Indian Chili Crisp. Cook for 1 minute, allowing the oil and crunchy bits to bloom and infuse into the base.
Simmer Covered
Pour in heavy whipping cream and water together, stirring to loosen the mixture into a smooth sauce.
Add the uncooked pasta directly into the pot and season with salt to taste. Bring to a gentle boil, then reduce to a steady simmer and cover.
Cook covered for 10–14 minutes, stirring every few minutes to prevent sticking, until the pasta is tender and the sauce thickens.
If the liquid reduces too much while cooking, add a splash of water as needed to maintain a creamy, saucy consistency.
Finish
Uncover and simmer briefly if needed to reach a silky, glossy texture.
Serve
Serve warm and finish with an extra spoon of Yo Amma Indian Chili Crisp for added heat and texture.
